Hog Island Grilled Cheese

This grilled cheese is seriously next level: our signature blend of gruyere, vella mezzo secco, and fromage blanc sandwiched between a green onion slab from ACME Bread Co. It’s a Hog Island favorite, and for good reason—it’s a rich, melty meal that goes great with oysters, our House-Made Pickled Veggies or all by its glorious self.

This recipe is meant for preparing our pre-packaged Grilled Cheese Kit, not a full recipe to make it from scratch. It’s made with an ACME Green Onion Slab and a cheese blend of Fromage Blanc, Mezzo Secco, and Cave Aged Gruyere.

Option 1 – Cooking your Grilled Cheese on the stove:

Heat a non-stick pan over medium-low heat. Add “just enough” butter to cover the bottom of the pan. Once the butter is fully melted and bubbling but not brown, cut your assembled Hog Island grilled cheese in half before adding to the pan. Cook on one side for 3-4 mins until you start to see some browning and melting cheese on the bottom side. Flip and cook for another 5 mins on the other side. Cheese should be ooey-gooey and bread should be GBD (golden, brown and delicious).

Option 2 – Cooking your Grilled Cheese in the oven:

Preheat your oven to 400 degrees. Cut assembled grilled cheese in half. On a baking sheet, remove the top piece of bread and bake next to the rest of your grilled cheese for 10 mins or until cheese is melted and bread is toasted. Replace the top piece of bread and serve.

Option 3 – Cooking your Grilled Cheese on Cast Iron/Oven/Stove (Andi’s Preferred Method):

Put a cast iron pan in a cold oven. Crank your oven to 450° and let the cast iron come to temp. Meanwhile, heat a second pan on your stovetop with “just enough” butter to cover the bottom of the pan. Once the butter is fully melted and bubbling but not brown, cut your assembled grilled cheese in half and add to pan. (Make sure to keep the two halves close together to support the weight of your cast iron). Once the sando is on the stove, remove your preheated cast iron pan from the oven and place directly on top of your cooking grilled cheese. Press down slightly and cook 5-10 mins or until cheese is melty, ooey-gooey and the bread toasted to crunchy golden brown perfection. Enjoy!

Option 4 – Cooking your Grilled Cheese on a panini press:

Heat and serve, ‘nuf said.
