A special harvest of Hog Island's most rare and unique oyster, The French Hog, just for you, just in time for Valentine's Day.

French Hogs are Hog Island's European Flat (Ostrea edulis) oyster grown in the rich, cool waters of Tomales Bay. A native of Western Europe, the most common market name for this oyster is the Belon. Once the most abundant oyster throughout Europe, ‘Flats’ have become an increasingly rare breed world-wide, and thus, a very special treat for oyster lovers.

With round, flat, fan-like shells, French Hogs deliver the bold flavors that European Flats are prized for: earthy, tannic, sea kelp with a lingering, tangy copper finish. Indeed, their brazen nature makes them a true oyster lovers’ Valentine.
