A classic Washington oyster, Hama Hamas are regularly featured on our Hog Island Oyster Bar menus. Farmed on the Eastern edge of the Olympic Peninsula on the Hood Canal, these beauties are the true essence of the wild Pacific Northwest -- think umami,smokey earth,salt air.
The folks at Hama Hama are just as passionate and oystercentric as we are. Last year they introduced us to a brand new oyster, the Blue Pool, a petite and sculpted version of the Hama Hama beach oyster. Yes, oysters too can tone and buff up with a good work out. Grown in 'tipping' bags that rise and fall with the tide cycles and tumble the oysters, Blue Pools are a deep cupped, firm oyster with excellent muscle tone and a rich, woodsy flavor.
